How an obsession with coffee became its own café on Münzstraße. A behind-the-scenes look at KOKO COFFEE LAB.
When I opened KOKO COFFEE LAB on Würzburg's Münzstraße in 2025, it wasn't a business-plan-driven project. It was the answer to a question that had occupied me for years: Why are there so few places in Würzburg where coffee really takes center stage?
From hobby to own café
It all started with a hand grinder and an AeroPress – like it does for so many. From daily brewing came reading about origin, roasting, and extraction, then cuppings, courses, and countless coffees tasted. At some point it was clear: this is no longer a phase, it's a craft I want to practice.
Why Würzburg?
Würzburg isn't a big city, but it's a very lively one. University, wine culture, gastronomy – there's a culture that values quality. At the same time, before KOKO there were hardly any places in the city center devoted exclusively to specialty coffee. Closing that gap is the heart of KOKO.
What makes us different
Freshness is non-negotiable
No large batches, no warehouse stock. Our coffees are freshly roasted in small batches – what you buy from us is only a few weeks old. Freshness has a direct impact on a coffee's flavor profile – that's why it matters to us.
We explain
Whether in the shop, online, or in the café: whoever buys one of our coffees gets an explanation – on request – of what's in it, how to prepare it, why grind size matters. Coffee isn't a mystery – but context helps you appreciate it.
We choose carefully
We source our coffees from a few carefully selected specialty roasters who work directly with farms and importers. Transparency isn't a marketing phrase – it means we know where the beans come from and how they were processed.
